Sorry I don't have a picture of these. Trust me, they are so yummy! My kids both exclaimed "Mom! where did you get this recipe?" and "mmm, this is sooo good!" It's rare to hear that from my kids so I'm sure your kids will like this too.
Ingredients:
3 zucchini (3 is enough to fill a 9x13 dish)
1pound ground beef
2 small cans tomato sauce
1 medium can diced tomatoes
1 small onion
3 cloves garlic, crushed
1/2 tsp. dried oregano
1/2 tsp. dried parsley
1 tsp. salt
pepper
Brown ground beef, onion and garlic. Add seasonings, diced tomatoes and tomato sauce. Simmer while you prep the zucchini.
Chop both ends of the zucchini. Slice each zucchini in half lengthwise. Using a grapefruit spoon, scrape the seeds and most flesh from inside the zucchini. Place side by side in a greased 9x13 baking dish.
Evenly distribute meat mixture among the zucchini "boats"
Top with cheddar cheese.
Bake at 350 for 35min or if your running late like me 400 for 25 min. Enjoy!
