This is a delicious version of the old classic. My kids weren't crazy about it. I'm still not sure why. It's packed with flavor from the white wine so definitely don't leave that out.
Ingredients:
1 pound ground beef
1 small onion
3 garlic cloves, crushed
1 green bell pepper, diced
*Saute the above ingredients until meat is cooked and veggies are tender. Then add:
1 tsp. salt
1/2tsp. dried oregano
1/2 tsp. dried parsley
1 cup frozen sweet peas
1 cup dry lentils
1 cup white wine ( not cooking wine, a real bottle of wine. And make sure you pour a glass for yourself too :)
* simmer, covered while you prepare the mashed cauliflower
Mashed Cauliflower/Carrots:
Steam together 1 bag frozen cauliflower and 3 carrots (sliced thin) until soft. Drain the veggies then put them in the bowl of a food processor. Process still smooth. Then add 1 tsp. salt, 4 tbsp. butter, 1/2 shredded cheddar. Pulse a few times to mix.
Spread beef mixture in a 9x13 pan and top with mashed veggies. Add more shredded cheddar if you want. Bake at 400 for 25 min
